The Cannonau Noras from Cantina Santadi in Sardinia is a red wine crafted from 90% Cannonau and 10% Carignano grapes. The grapes for this wine are handpicked, destemmed, and macerated in stainless steel tanks, fermenting at a controlled temperature of 22°-24°C for 12-14 days. Throughout fermentation, the must is frequently pumped over to achieve optimal extraction of tannins, polyphenols, and extracts, a process for which the bush-trained Carignano is renowned. Subsequently, the wine matures for 6 months in second-use oak barrels and another 6 months in the bottle.
The Noras presents itself with an intense ruby-red color, garnet reflections, and a complex, Mediterranean bouquet of blueberries, ripe blackberries, sweet spices, tobacco, and chocolate. On the palate, the wine is warm and soft with elegantly intense tannins.
This red wine pairs excellently with hearty dishes, roasts, grilled meats and fish, game, and cheese. We recommend decanting the Noras at a serving temperature of 18°C, and serving it in large bowls with a wide opening to fully unlock its aroma.
