Pecorino and Caprino Cheese

In Sardinia, there are more sheep than people. Pecorino cheese is made from pure sheep's milk. Pecorino Sardo is a protected designation of origin that guarantees the best quality. There are different types of Pecorino cheese available, from the mild "Pastorino" to the flavorful and aged "Gran Sardo" for at least 6 months, and the "Gran Cao," which is best used as a grating cheese similar to Parmesan.
