Evosophia is a limited-edition extra virgin olive oil produced from selected Sardinian cultivars including Bosana, Nera di Oliena, Semidana, and other local varieties. The olives are harvested early, from late October to early November, while still green, ensuring exceptional aromatic intensity and high nutritional value.
In the glass, Evosophia displays a vibrant green color with golden reflections. On the nose, it reveals an intense aroma with notes of green almond and fresh tomato leaf.
On the palate, it offers a harmonious balance of bitterness and elegant spiciness, with distinctive hints of thistle, artichoke, rocket and chicory. The finish is persistent, refined and pleasantly peppery.
