In this process, the pasta dough is pressed through special bronze dies, giving the pasta a rough surface. This unique texture helps sauces cling better to the pasta, enhancing the flavor. The bronze method also requires higher pressure, resulting in denser and more al dente pasta – a must for any pasta lover.
