This wine is crafted from grapes grown in the hills of Limbara. The lean soil, limited water supply, and meticulous winemaking techniques combine to produce a robust red wine that is a hallmark of Gallura's culinary tradition. It pairs wonderfully with game, roasts, and red meats.
Classification: IGT (Typical Geographical Indication)
Winemaking: Traditional red winemaking, with maceration on the skins for 5-6 days.
Aging: In the cellar for 5-8 months.
Appearance: Intense ruby red, clear.
Nose: Grand, enduring, with a vinous bouquet, fragrant, hints of small ripe fruits.
Palate: Dry, round, mellow, well-structured, with a good balance of acids and tannins, providing a long-lasting finish on both the nose and palate.
Storage: Maintain a constant temperature of 16°C, humidity at 75%, controlled light, and store bottles horizontally.
Serving: Use a medium-tall glass without a flared rim, serve at a temperature of 16°C, and uncork at least 30 minutes before serving.
Pairings: Ideal with hearty first courses featuring meat sauces, red and white meats, grilled or roasted dishes, lamb, and pork stews or roasts. Also pairs well with mild Sardinian Pecorino cheese.
