The Vermentino Ràfia is born on the limestone hills, well-exposed to the sun and kissed by the sea breeze, rich in precious elements that give the wine the salinity and juiciness so typical of the Alghero region. The vines bear only a few grapes, but of exceptional quality.
The crates of grapes are cooled in the refrigerated storage at temperatures close to zero degrees, allowing for a complete extraction of flavors during pressing. After 6 hours, the must goes into stainless steel tanks, and after a natural sedimentation of the product, fermentation begins at a controlled temperature of about 13 degrees. At this temperature, the must unfolds its full aromatic and flavor potential. After a few days, the Rafia continues its fermentation in 500-liter oak barrels and remains there for about 10 days, then it is transferred to steel barrels for about a year. During this phase, batonnage (manual stirring) of the yeast determines the character and alters the taste perception. The wine gains in body, volume, longevity, and character. Maturation is completed by about 4 months of aging in the bottle.
