Ingredients: Cow's Milk, Cheese Salt
Parmigiano Reggiano, commonly known as Parmesan, is a hard cheese made from cow's milk and produced in several regions in northern Italy. It is one of the most famous cheeses in the world and is considered one of the most versatile cheese varieties overall. Parmigiano Reggiano can be enjoyed either in chunks or grated as a flavorful addition, especially on Italian pasta dishes.
Since 1996, Parmigiano Reggiano has been awarded the EU-wide DOP label (Denominazione d'Origine Protetta) as a protected designation of origin. In June 2002, the European Court of Justice in Luxembourg ruled that any cheese labeled "Parmesan" in the entire European Union must exclusively contain Parmigiano Reggiano.
About 16 liters of milk are needed to produce 1 kg of Parmigiano Reggiano. A whole wheel weighs 36 kg, has a diameter of 45 cm, and is 24 centimeters high, requiring the processing of 576 liters of milk.
Parmigiano Reggiano is available in various age classifications:
12 months -> nuovo / 24 months -> vecchio / 36 months -> stravecchio 48 months -> stravecchione / 72 months -> extra stravecchio
