This exclusive Cannonau comes from the vineyards of Loreta Attesu, thriving on eroded granite soil with optimal southern exposure. The 30-year-old vines are cultivated using a short tree-training system, producing a limited yield of up to 6000 kg per hectare. Harvesting takes place from late September to early October, ensuring the grapes reach perfect ripeness.
The wine takes its name from the traditional mask that has made Mamoiada and Sardinia famous worldwide.
Winemaking: Fermentation includes a long maceration period at a controlled temperature (25–28°C), followed by aging in wooden barrels and further refinement in the bottle.
