The Sabiu Cannonau di Sardegna Riserva DOC is a powerful and elegant red wine crafted from a meticulous selection of the oldest Cannonau vines in Signoranna, Codrongianos (SS), Sardinia. Harvested by hand in early October, these 100% Cannonau grapes are chosen for their ripeness and character, with a low yield of 60 quintals per hectare ensuring concentrated quality.
The wine undergoes a careful aging process: 6 months in stainless steel, 8 months in concrete, and another 6 months in small French oak barrels. This triple maturation results in a deep garnet-red wine with notes of ripe red fruits, subtle spices, and fine oak undertones.
On the palate, Sabiu is full-bodied, round, and well-balanced, with silky tannins and a persistent finish. A perfect match for roast meats, game, or aged cheeses. Best served at 18°C.
