SU'ANIMA is a Cannonau di Sardegna DOC wine sourced from Sardinia. The vineyard benefits from a Mediterranean climate with mild winters and hot, dry summers. The soil is clay with limestone deposits.
The vineyard maintains an approximate density of 5,000 vines per hectare, using a vertical trellis and cordon spur/Guyot pruning for training the vines. Harvesting takes place by hand in small containers from mid to end of September.
The winemaking process involves destemming and crushing the grapes, followed by fermentation and maceration in steel tanks at a controlled temperature of 77 °F / 25 °C for seven days. After gentle pressing, the wine matures for 12 months in pre-used small oak barrels, with an additional 2 months of bottle aging.
In terms of appearance, the wine exhibits a ruby color with orange highlights. On the nose, it offers enticing floral notes and red berry aromas, finishing with a touch of sweet resina.
The palate of SU'ANIMA is characterized by an approachable taste, featuring a pleasant freshness supported by softened, floral tannins. It is a food-friendly wine that pairs well with savory starters, first courses, and semi-aged cheeses.
