Perdera, Monica di Sardegna DOC
This Sardinian red wine presents itself in a deep ruby red hue and enchants your senses with fruity aromas of red fruits, accompanied by delicate notes of flowers and spices, with a hint of vanilla in the background. On the palate, it reveals itself as dry, soft, and fruity, with a subtle touch of sweetness in the finish - a characteristic feature of the Monica grape variety. This wine is characterized by a mild tannin structure and lively acidity, offering a refreshing, fruity finish. The vinification of this wine is carried out with a minimum of 90% Monica grapes, complemented by a maximum of 10% Carignano and Bovale Sardo. The Monica grapes are grown in the traditional Alberello system and undergo controlled-temperature fermentation after careful manual harvesting. Aging takes place for one year, with 6 to 8 months in neutral French oak barrels and 4 months in concrete tanks, followed by additional bottle aging of 2 to 3 months. The Perdera Monica di Sardegna DOC is a versatile wine that pairs excellently with grilled meats, seafood dishes, and even suckling pig. Serve it slightly chilled and savor the essence of Sardinia in every sip.
